last sunday

Last Sunday, while I waited for the rain to change to snow, and despaired that the snow may never come, I pulled out the chicken that I had cooked the past Sunday and went ahead with the plans I'd had for it. (The day I cooked it, I'd planned to finish off the dish I had in mind, but was buried under a bad sinus infection.)

The plan, you see, was Chicken Pot Pie. I love Chicken Pot Pie! I hardly ever have it and had never made it. I decided it couldn't be that hard to make and that I would try my hand at it.

I went to the Food Network Channel website and searched for Chicken Pot Pie recipes. I couldn't find one that I really liked, so I decided to improvise and make one up. It actually turned out pretty good, even through I forgot to season the chicken when I'd cooked it the week before and had to substitute milk when I didn't have enough heavy cream.



I will definitely make this again and will change it up a little bit. I'll make sure I season the chicken... and that I have enough heavy cream. I'll also probably add corn. I just love corn. Don't you just love corn?

Anyway, after I refine my recipe, I'll post it and hopefully photos of the process.

I ended up using only half the chicken that I had cooked, so I decided to experiment with a homemade chicken noodle soup. It turned out REALLY good. In fact, I finished it off for lunch today. I was surprised at how good it was, as I mostly just tossed stuff in here and there. I let it simmer for several hours and I think that helped. Yum, yum, yum.

Well, that is how I spent my time waiting for the snow to come. Tomorrow is another day at work, but at least I'll have chicken pot pie to get me through it. :-)

I love chicken pot pie - or turkey pot pie. There is a restaurant down the road called O'Brien's Turkey House - you can get turkey just about any way you want (and other food also if you aren't a fan of turkey) but who is not a fan of turkey? Ok - so Don isn't but he eats hamburgers when we go there. They make the most heavenly turkey pot pie - flakiest top crust - ohhh now I'm really hungry for turkey pot pie!!!

Biscuits and gravy too - ahhh comfort food.

Yum yum yum. I, however, am not a fan of corn in things. Prefer it on the cob. So if I ever got to yours for dinner... :-)

That pot pie looks so good! I love corn but corn does not love me. hee hee

Pretty much anything cheesy or creamy is good comfort food for me.

I LOVE corn, especially the sweet corn in the summer, the kind with both yellow and white kernals mixed together on the cob! I don't like those mini-corn things that come in Asian dishes, it just freaks me out to eat the whole cob so this is the one place I don't like corn. I love pasta as comfort foods! And mashed potatos! And chocolate...

Your chicken pot pie looks delicious! I love corn too. My problem is making a good pie crust ~ yours is yummy looking.

My favourite comfort foods include popcorn, hawaiian meatballs, grilled cheese sandwiches and shepherd's pie.

I love grilled cheese and tomato soup... I also love to make soups, i never make it the same way twice though... I get out the crock pot and just throw whatever in... I do love those seasoning packets though for like chili or beef stew i will throw those in when making a soup... Yummy
