Spring!

Spring is here. In less than an hour, the first day of spring will arrive. Despite my love for winter and my wishes that here in the south we could have a longer winter, I am ready for spring. I am ready to get out in my garden, to open my windows and feel the breeze blow in to clean out the lethargy of winter.
I am ready to watch the flowers grow and bloom, to watch the clouds as they pass through the bright beautiful sunshine, to feel some warmth on my skin.
I love spring anywhere, but if I could choose I would always greet it in a garden. ~Ruth Stout
I feel this way.. I am anxious to be in my garden, working my fingers through the dirt and planting and nurturing in my own way.
I wish you a warm, sunshiny first day of spring...
Yesterday the twig was brown and bare;
To-day the glint of green is there;
Tomorrow will be leaflets spare;
I know no thing so wondrous fair,
No miracle so strangely rare.
I wonder what will next be there!

m.i.a...
I am so behind on blogging and blog reading that I wonder if I can get caught up. It has been a long and busy week (and it's only Wednesday); and the rest of the week looks pretty busy too. I have some things to share, pictures and tidbits, but I won't get to that tonight.
Hopefully tomorrow I'll be able to get a real post up.

last sunday
Last Sunday, while I waited for the rain to change to snow, and despaired that the snow may never come, I pulled out the chicken that I had cooked the past Sunday and went ahead with the plans I'd had for it. (The day I cooked it, I'd planned to finish off the dish I had in mind, but was buried under a bad sinus infection.)
The plan, you see, was Chicken Pot Pie. I love Chicken Pot Pie! I hardly ever have it and had never made it. I decided it couldn't be that hard to make and that I would try my hand at it.
I went to the Food Network Channel website and searched for Chicken Pot Pie recipes. I couldn't find one that I really liked, so I decided to improvise and make one up. It actually turned out pretty good, even through I forgot to season the chicken when I'd cooked it the week before and had to substitute milk when I didn't have enough heavy cream.
I will definitely make this again and will change it up a little bit. I'll make sure I season the chicken... and that I have enough heavy cream. I'll also probably add corn. I just love corn. Don't you just love corn?
Anyway, after I refine my recipe, I'll post it and hopefully photos of the process.
I ended up using only half the chicken that I had cooked, so I decided to experiment with a homemade chicken noodle soup. It turned out REALLY good. In fact, I finished it off for lunch today. I was surprised at how good it was, as I mostly just tossed stuff in here and there. I let it simmer for several hours and I think that helped. Yum, yum, yum.

Well, that is how I spent my time waiting for the snow to come. Tomorrow is another day at work, but at least I'll have chicken pot pie to get me through it. :-)

my day in pictures
i stayed home today... i thought i would show you why...
this doesn't happen often around here... officially we had a total of 5.7 inches of snow. i could have gone to work, and probably should have since it is only supposed to get colder tonight and the roads will be worse tomorrow...but if i had, i wouldn't have been able to see this...
Dylan loves the snow about as much as i do...we went out and romped around for about half an hour... he hasn't been this energetic in months and my heart swelled to see him so happy...
now we are inside in front of the fire warming our toes and fingers... i plan to take him out again for a good romp before it gets too dark...
I've been very quiet this past week or two...partly because i have been very sick and partly, well, i just haven't had anything to say...
it seems that is changing... i have a lot i want to say, a lot of things to share...
